I Love Tacos!

I won’t win any food photography awards but I wanted to share the makings of last night’s dinner.  Tacos are a great way to get lots of color into your meal.  Whether you opt for beef, chicken, fish, or bean tacos it’s all about the color.  We chopped up some cilantro, red tomatoes, green onions, red cabbage, avocado, and romaine.  And, of course, some cheese, sour cream and hot sauce.

We used chicken last night and organic, non GMO corn tortillas.  You can even skip the tortillas and just toss it altogether into a big healthy salad.

Color!  It’s what’s for dinner!  And lunch.  And snacks.
