Use the whole turkey. Make turkey stock.

Thanksgiving is over but the turkey can still keep on giving.  Turn the left over turkey carcass into a healthy stock for later use.  One of my favorite blogs has an easy recipe.

Here is an interesting quote from the recipe:  “I add a little vinegar to my stocks which helps to pull the minerals from the animal bones creating a nutrient-rich stock. This is especially important for growing children and pregnant and nursing mamas”.    I’d add that those same minerals are important for the rest of us as well.
