Kimmy’s in town!!

My daughter Kim is home for a visit.  We always have so much fun and it’s always so good for me!

Today we hiked Twin Falls then came home, hit the kitchen, slicing and dicing up a great salad with fresh lettuce, cabbage, tomatoes, cucumber, avocado, radishes, goat cheese crumbles, dressed lightly and topped with tuna.

    Looks so yummy!!! I love you and miss you Kimmy!! Looks like a fun day. What kind of tuna do you use, Lisa? Do you mix it with anything to put it on the salad?

    • We miss you too Mary!! I use “light” tuna not albacore (white) tuna. Light tuna is made using smaller tuna like skip jack. Smaller tuna means less mercury. Albacore tuna are HUGE fish and can be full of mercury.
      And I just mixed the tuna with a bit of mayo.
